Sale of beef


Beef from Highland Cattle is lean and low cholesterol meat from animals that have lived a natural life outdoor all year. In summertime the animals are in the meadow in which we neither fertilize or spray. There is plenty of grass throughout the season as we only put a few animals in relation to land size. In winter we move the animals to the pastures around the farm, where they are fed concentrated feed and silage. In addition, all animals  always have free access to straw, vitamins and minerals they eat themselves according to seasonal needs. Because the animals are outside all year in the fresh air, we very rarely need veterinarian for sick animals.

In winter we butcher the animals that can not be used in breeding. We emphasize that the animals from birth to slaughter live a good life. The animals are veterinarian checked before slaughter. After slaughter, the bodies hang in the butcher store in 2-3 weeks and matures. Then the butcher divide pieces from the entire animal into portions corresponding to 1/4 or 1/8. All cuts are packaged and labeled with contents and date on the plastic bags just ready to be put in the freezer. We provide recipes that give instructions on the use of the various pieces of meat and inspiration to prepare new and tasty dishes. Our customers demand primarily luxury cuts that contains the following content:

500 g tenderloin
500 g eye of round 
750 g osso buco
1 kg thin rose
1 kg sirloin
1 kg legs or cuvette (only every other packet has increased, while each other has thin sirloin or rose)
1.25 kg roast beef
1.75 kg fillet
1.75 kg best casserole steak 
10-12 kg mince (whole forparten)

Total approx. 20 kg

As no two animals are similar, the quantities are seen as indicative.

The price is 100 kr/kg. In addition, you get around. 1.5 kg of bones with no charge. Liver, tongue and tail are also free, if anyone wants it. Are you interested in buying meat directly from the hook the price is 60 DKK/kg. You must expect that there is some shrinkage and the price is therefore approximately 100 DKK to the cut, but the advantage of buying on the hook is that you can even cut up with the butcher and get all the pieces as you want it.
